I have to admit, I am not the best planner when it comes to meals for the week. I kind of base things off of what I have and how much energy I have at the end of the day. I have created a list of meal ideas in hopes of helping my husband decide what he wants, but find myself just deciding for him. Sometimes it doesn’t always work out, but more on that later. Life often requires flexibility, and my kitchen is no different. So here’s what went on for the week
Well actually, this was last week. I didn’t want to throw it into my 365 post as it didn’t quite “fit”.. Chicken Parmesan is under all that cheese and sauce. Pretty easy dinner, and considering it’s Mozzarella cheese and baked, not too un-healthy either.
I can’t take credit for these goodies, but it was part of our food intake. This was the spread for the Mr.’s Bday with his family. That’s PB pie… beyond tasty which caused me to eat too much of it as usual, especially considering I also had 2 pieces of the cheesecake on the left. And for the Mr’s bday here I made the following.

And the main course? High dollar air aged strip steaks my boss bought from Wegman’s, which ended up trumping my specialty burgers I originally bought for the Mr. I also love this photo, especially after what I just said and how the burger is composition wise… These steaks look so inviting, and that’s a lot coming from someone who does not eat meat (me) or have any desire to.
And for Dessert a simple chocolate cake. The Mr. did not give me any better ideas in a timely fashion so I looked this one up the day of, surprisingly it was fantastic. Not overly right, moist, good more chewy texture… and best of all slices could be picked up and eaten by hand. (horrible huh?) Oh and no frosting needed, but whip cream is always welcome. It was a King Arthur recipe check it out, it can even be mixed directly in the pan.
Overall it was a lovely meal, good little birthday celebration.
The dogs also lucked out this week. I marinated a flank steak but by the time I was done with work and ready to cook it it was pretty late so we let it wait till the next day. Well something came up that day too that prevented me from my meal plans yet again… so since it had kinda reached the 72 hour mark I didn’t trust it for us. I read up on marinating times, and it looked like it might have been fine so I decided to cut it up for the dogs. First I rinsed it off really well, then I sliced it for the dehydrator. Upon slicing I noticed it had cured almost all the way through, so I felt even better about recycling it to them. We ended up with two little trays of these
Pretty high dollar looking jerky snacks. Now to find some tricks deserving of them.
So all in all it was a productive week in the kitchen, messes were made and cleaned up… meat was consumed and preserved, and mac & cheese is looking to be a likely lunch tomorrow. Now it’s off to bed early to get through my working weekend.

I think I could make a meal out of the steak and corn. I am sure it is the fabulous photos which make them look so tempting! 🙂
of course you could! the corn was awesome… I don’t eat meat so my meal was rather unhealthy: 2 ears of corn, M&C, and tator tots… followed by chocolate cake. Can’t get much worse than that eh? But I enjoyed it thoroughly
OMG – that steak looks absolutely heavenly! It’s 5:30 and I’ve eaten a piece of toast and some popcorn today. I am in desperate need of a real meal!
Those all look so scrumptious, making my mouth water, and yes the pic of the corn is fabulous!
Meal planning is my least favorite part of Saturday morning! I’m never in a cooking mood, and put off meal planning until the last possible moment, and then try to come up with dishes that take the least amount of time to cook (or something I can make for two days).
Your mac & cheese look yummy, and so do the pies and the cake.
